Milk drinks

This sour-milk drink is akin to kefir. It is very popular among the Caucasian, Balkan and Turkic peoples. In ancient legends, he is known as a drink of the gods and an elixir of youth and beauty. In general, the thin eastern people are a connoisseur of all that is useful and beautiful. Sour-milk drinks with healing and anti-aging properties are valued at their weight in gold. In ancient times, Ayran recipes were passed from mouth to mouth, from ancient sages to their young followers and kept secret from most people.

A bit of history

This drink came to us from the distant southern Kerkinitida. Even about the II century BC, the ancient Greeks loved him for his taste and useful properties. Later, during the bloody wars with nomadic peoples, the recipe for cooking airan became known to the Scythians. And during the time of the Great Migration, it became simply irreplaceable during long transitions, as it could retain its valuable qualities for a long time in adverse weather conditions.

The Eastern Highlanders staunchly kept the recipe for this drink. Interested in the secret of longevity of mountain peoples, the Russians learned about the existence of this miracle drink. But when trying to find out how to cook it, we ran into an unexpected obstacle. Caucasians did not want to betray their secret for any benefits. However, the oriental elders could not resist the feminine beauty. One of the Caucasian princes fell in love with a beautiful Russian girl and the treasured Ayran recipe became a wedding present to the beauty.

The homeland of this drink is considered to be Kabardino-Balkaria and Circassia. It is noteworthy that the airan is prepared differently by settled and nomadic peoples. In some it looks more like a drink, in others it looks more like food. It is prepared using katyka - a type of sour milk, which, when ripened, evaporates and turns out to be very greasy. In settled peoples, katyk was mixed with cold spring water and ice was added. He remarkably quenched thirst and was used precisely in that capacity. The nomads used a special leather bag for cooking - a wineskin, in which milk and sourdough were poured. In the process of racing, the heat from the horse and the sultry sun did their job, and the product became dense like sour cream. He was often used for food, and to quench his thirst, he was bred with water, milk or koumiss. Such a diluted drink is called chalap or chalap. Armenians have a product very similar to ayran, called tan.
